CHOCOLATE CHIP TAHINI COOKIES

These combine rich, dark chocolate chips with the nutty flavour of tahini to create a complex and well-balanced flavour.

MAKES 24

100g (3½oz) dairy-free butter, softened (we used Pure)
175g (6oz) light brown soft sugar
1 free-range egg
60g (2oz) tahini
200g (7oz) plain flour
1tsp baking powder
4tbsp cocoa powder
100g (3½oz) dark chocolate chips or roughly chopped dark chocolate
75g (2½oz) sesame seeds

1 In a large bowl, beat the dairy-free butter and sugar until creamy, then gradually beat in the egg and the tahini. Sift the flour, baking powder and cocoa powder over the mixture and stir to combine, then mix in the chocolate chips. Once the dough comes together, tip out onto a clean surface and knead into a 24cm (91/2in) cylindrical log. Sprinkle the sesame seeds onto a chopping board and roll
