CHRISTMAS on a budget

ROASTED GARLIC CHICKEN MARYLANDS

SERVES 4-6 PREP AND COOK: 50 MINS

100g butter, chopped
2 cloves garlic
1 tblsp chopped fresh parsley, extra to garnish 1 tsp finely grated orange rind 8 x 250g chicken marylands
Lemon wedges, to›serve

1 Combine butter and crushed garlic in a small saucepan and stir over a low heat until butter is melted. Remove from the heat and stir in the parsley and orange rind.

2 Place the chicken marylands in an oiled, extra large roasting pan. Brush butter mixture over chicken. Season with salt and pepper.

3 Cook in a hot oven (200°C), brushing with pan juices halfway through, for about 40 minutes, or until chicken is golden and cooked through. Remove from the oven.

Transfer the chicken to a serving platter. Spoon over the pan juices. Sprinkle with extra fresh
