SESAME-CRUSTED CHICKEN GOUJONS

PREP + COOK TIME 35 MINUTES MAKES 32

1 cup (150g) plain flour
3 eggs
1 tablespoon water
2 cups (150g) panko breadcrumbs
½ cup (50g) white sesame seeds
½ cup (50g) black sesame seeds
1kg chicken breast fillets, sliced thickly on the diagonal
vegetable oil, for shallow–frying
2 limes, halved and cut into thin wedges, to serve

WASABI MAYONNAISE

1 cup (300g) whole–egg mayonnaise
1½ tablespoons wasabi paste
1 tablespoon finely chopped fresh coriander
1 teaspoon mirin
