WALDORF TURKEY SALAD

START TO FINISH 10 MINS

SERVES 4 (AS A LIGHT MEAL)

80g (¾ cup) 97% fat-free
mayonnaise or gluten-free mayonnaise
2 tsp Dijon mustard or gluten-free mustard
Freshly ground black pepper
125g shredded cooked turkey or chicken
1 Granny Smith apple, unpeeled, chopped
1½ cups seedless red grapes, halved
70g (½ cup) chopped walnuts
12 large butter lettuce leaves

1 Combine the mayonnaise, mustard and pepper in a bowl. Add the turkey, apple, grapes, and walnuts. Toss to coat.

2 Line 4 small plates with 3 lettuce leaves each. Divide the salad mixture among the plates. Serve.
