Sweet and spiced, if you like carrot cake you’re sure to enjoy this twist.

You will need

✽ 300ml corn oil
✽ 4 eggs
✽ 250g light soft brown sugar
✽ 2tsp vanilla extract
✽ 150g sultanas, chopped
✽ 100g walnuts, chopped
✽ 500g pumpkin, grated
✽ Zest and juice of ½ orange
✽ Zest of 1 lemon
✽ 400g plain flour
✽ 1½tsp bicarbonate of soda
✽ 1½tsp baking powder
✽ 1tbsp ground cinnamon
