Smoky mushroom stroganoff
This recipe is full of flavour and perfect for those looking to cut down their meat intake
SERVES 4 PREP 10 MINS COOK 50 MINS / 4 HRS
✱ 1–2tbsp olive oil
✱ 750g chestnut mushrooms, sliced
✱ 1 large onion, finely diced
✱ 4 garlic cloves, crushed
✱ 1tbsp wholegrain mustard
✱ 2tsp sweet paprika
✱ 1tsp smoked paprika
✱ 500ml boiling vegetable stock if using the conventional method or 250ml if using the slow-cooker method
✱ 100ml soya yogurt
✱ 2tbsp chopped fresh chives
