Ham and courgette carbonara

Using courgette ‘pasta’ makes this dish vibrant and fresh.

SERVES 2 PREP 5 MINS COOK 5 MINS

125g 0% creme fraiche
1 garlic clove, crushed
500g courgette, spiralised
125g wafer-thin honey-roast ham, chopped
30g Parmesan cheese, grated (optional)

1 Heat the creme fraiche with the crushed garlic, and a generous pinch of salt and pepper. Simmer gently for 2-3 mins, stirring frequently.

2 Put the spiralised courgette in a sieve and slowly pour over boiling water until the ‘pasta’ is softened, but al dente. Reserve 2tbsp of the water.
