Clementine Negroni

The classic Negroni is given a beautiful wintry twist. Cin cin!

Serves 1  Ready in 5 mins

25ml gin
25ml Campari
25ml vermouth
25ml freshly squeezed clementine juice
1 rosemary stalk

to garnish

a slice of clementine
a sprig of rosemary

1 Place all the ingredients in a cocktail shaker almost filled with ice and shake hard so that you bruise the rosemary.

2 Pour into a glass filled with ice, and garnish with a slice of clementine and a sprig of rosemary. >>

Fennel and herb salmon en croûte

This fuss-free dish would be perfect for a pre-Christmas gathering or Boxing Day lunch.

Serves 6  Ready in 1 hr 30 mins, plus chilling

2 x 500g salmon fillets, skinned and pin boned 450g all butter puff pastry 1 egg, beaten

for the filling

a knob of butter
1 leek, finely chopped, white
