Make this cake up to 3 months ahead without the meringue. Store in the pudding basin. Once meringue is added, place on a freezerproof tray and keep for up to 1 week in the freezer.

500ml Peters Original Rainbow ice-cream, softened slightly
4 egg whites
250g caster sugar
