600g lean chicken tenderloins
2 x 400g cans chopped tomatoes
1 tablespoon mixed dried herbs
1 red onion, cut into wedges
300g button mushrooms, wiped clean
2 zucchini, halved lengthways, thickly sliced
80g pitted green Sicilian olives

Cauliflower mash

450g cauliflower florets
160g avocado
1 tablespoon olive oil margarine
2 tablespoons finely chopped flat-leaf parsley

1 Set a slow-cooker to high. Add all of the cacciatore ingredients, then cover and cook for 4 hours.
