Shakshuka
SERVES 2-3
INGREDIENTS
2 tbsp olive oil
1 small red onion, thinly sliced
1 small capsicum, thinly sliced
2 ripe tomatoes, diced
2 garlic cloves, crushed
1 tsp cumin seeds
1 tsp smoked paprika
1 tsp ground coriander
400g can chopped tomatoes
4-6 eggs
50g soft Persian feta
1 handful parsley leaves, chopped
METHOD
1 Preheat the oven to 180C. Heat the olive oil in an ovenproof frying pan. Add the onion and capsicum and fry over high heat for about 10 minutes, tossing the vegetables every minute or so. Add the fresh tomatoes, garlic and spices. Reduce the heat
