Speedy Italian dinners

BUTTER-CHILLI GARLIC PRAWNS

PREP + COOK TIME 15 MINUTES SERVES 4

2 tablespoons extra virgin olive oil
100g butter
2 fresh long red chillies, sliced finely
400g uncooked shelled medium prawns, tails intact
2–3 cloves garlic, crushed
2 tablespoons lime juice
¼ cup loosely packed fresh coriander leaves
1 medium lemon, cut into wedges

Heat oil and butter in a large frying pan over high heat and cook chilli, prawns, garlic and lime juice, stirring, for 3 minutes or until prawns just change colour. Season to taste.
