Spiced Lentil and Chickpea Salad with Halloumi

SERVES 4 | PREP AND COOK: 40 MINUTES

INGREDIENTS

2 tbsp olive oil
1 red onion, halved and sliced
200g cherry vine tomatoes
2 tsp harissa paste
400g can brown lentils, drained, rinsed
½ lemon, juiced
180g block halloumi, cut into ½cm slices
400g can chickpeas, drained and rinsed
Small bunch mint, roughly torn
