PIES are unquestionably one of my favourite comfort foods. They can be made in advance, are ideal for any number of guests, reheat well and create the sort of enticing aromas that get diners sat at the table quickly. If cooking for a shooting weekend I will always include at least one on the menu as the traditional ones hold so well, usually the first night when arrival times are staggered and unpredictable or for a shoot lunch when the chef is at the mercy of the gamekeeper’s timings.
