Fasolada Greek bean soup
SERVES 4-6
• 2 tbsp olive oil• 1 large white onion, diced• 2 garlic cloves, crushed• 4 sticks of celery, chopped• 1 tsp oregano• 1 bay leaf• 1 litre chicken stock (or vegetable)• 3• ¼ tsp ground cumin• ¼ tsp paprika• ¼ tsp cayenne pepper• 1 lemon, zest and juice• Parsley, chopped
