one-pan creamy tuscan salmon
One pan means less washing up, and that’s something we can get behind on busy weeknights. Salmon and semi-dried tomatoes are a flavour revelation, we promise!
serves 4 | prep 15 mins | cooking 15 mins
110g ( 1 /2 cup) semi-dried tomatoes in oil, chopped, 1 1 /2 tbs oil reserved
4 x 130g skinless salmon fillets
1 brown onion, finely chopped
3 garlic cloves, crushed
300ml pouring cream
80g baby spinach
1 tbs drained baby capers
1 /4 cup small fresh basil leaves
Crusty bread, to serve
1 Heat 3 tsp of the reserved oil in a large frying pan over medium-high heat. Cook the salmon for 1 minute each side or until golden. Transfer to a plate.
2 Heat the remaining reserved oil in the same pan over medium-high heat. Cook the onion and garlic, stirring often, for 5 minutes or until soft. Add the cream and 80ml ( 1 /3 cup) water. Bring to the boil. Stir through the sun-dried tomato. Arrange the salmon in the pan in a single layer. Reduce the heat to medium-low and simmer for 3 minutes or until the salmon is almost cooked through.
