1 CHICKEN & MANGO RICE PAPER ROLLS

MAKES 12

Pick 12 flat-leaf parsley leaves. Shred 200g cooked chicken, slice 1 mango and place 300g packet ready-made coleslaw in a bowl. Place 1 x 22cm softened rice paper sheet on a clean work surface. Top with one parsley leaf, some shredded cooked chicken, a slice of mango and some coleslaw. Fold in sides, then wrap firmly to enclose filling. Repeat to make 12 rice paper rolls in total. Combine ½ cup mayonnaise, 2 teaspoons curry powder and 1 tablespoon water in a small bowl. Serve with rolls.
