COLESLAW

“In this take on traditional coleslaw, I replace the white cabbage with red, and add apple for crunch. A dash of lime juice adds tanginess and prevents the apple from browning.”

Serves 4 EASY GREAT VALUE Preparation: 20 minutes

red cabbage 250 g, shredded
sesame oil 1 t
green pepper 1, seeded and cut into strips
yellow pepper 1, seeded and cut into strips
red pepper 1, seeded and cut into strips
medium red apple 1, cut into thin strips or grated
spring onions 4, chopped
fresh coriander 4 T chopped
white sugar a pinch
pineapple juice 3 T
lime juice a dash

Mix all the ingredients
