3 tbsp olive oil10 garlic cloves, finely chopped4 large white onions, finely chopped1 whole hot red chilli, finely chopped6 carrots, finely chopped500g mixed mushrooms, (such as button, shitaake, portobello, porcini), finely chopped750ml red wine6 rashers of thick cut, rindless bacon500g beef mince150g tomato purée2 x 400g cans chopped tomatoes120g chorizo, chopped2 bay leaves8 basil leaves1 tbsp dried oregano1 beef stock cube1 tbsp brown sugar1 tbsp English mustard1 tbsp soy sauce1 tbsp rice wine vinegar1 tsp Worcestershire saucesplash of milk500g dried spaghettihandful of grated parmesan, plus extra to serve (optional)baguette, to serve (optional)
