Date Scones

Makes 12

½ cup dried dates
1 cup plus 1 tablespoon all-purpose flour, divided
½ cup plus 1 tablespoon whole wheat flour
¼ cup granulated sugar
1½ teaspoons baking powder
¼ teaspoon kosher salt
¼ cup cold unsalted butter, cubed
½ cup plus 1 tablespoon cold heavy whipping cream, divided
1 large egg

• Preheat oven to 375°. Line a rimmed baking sheet with parchment paper.

• In the work bowl of a food processor, pulse together dates and 1 tablespoon all-purpose flour until dates are finely chopped.

• In a large bowl, whisk together whole wheat flour, sugar, baking powder, salt, and remaining 1 cup all-purpose flour. Using a pastry blender or 2 forks, cut in cold butter until it resembles coarse crumbs. Add date mixture, stirring until combined.

• In a small bowl, whisk together ½ cup cold cream and egg. Add cream mixture to flour mixture, stirring until mixture is evenly moist. Working gently, bring mixture together with hands until a dough forms. (If dough seems dry, add more cream, 1 tablespoon at a time.)
