FATHER’S DAY FEAST!
CIDER & SPICE MARINATED CHICKEN
SERVES 4-6 PREP 25 MINS + MARINATING COOK 45 MINS
1.4kg chicken, butterflied
300ml apple cider
2 tbsp chopped coriander
1 lime, juiced
1 tbsp sesame oil 2 garlic cloves, crushed
1 tsp ground cumin
½ tsp ground cinnamon
½ tsp cayenne pepper
coriander leaves, lemon
wedges, to serve
SALAD
100g baby spinach leaves
½ cup chargrilled capsicum, sliced
1 avocado, peeled, sliced
2 tbsp olive oil
1 tbsp apple cider vinegar
1 Place chicken in a nonmetallic large bowl or plastic container. In a large jug, combine remaining ingredients and mix well. Season to taste. Pour marinade over chicken, turning to coat. Chill 2 hours.
2 Bring chicken to room temperature. Preheat barbecue chargrill plate on medium.
