TOMATO STRATA

A strata is a baked savoury dish made from chunks of bread layered with a mixture of egg, milk, cheese and your choice of other flavoursome ingredients. It’s the ideal dish to serve for breakfast, but it can be served as a light lunch or supper too. This recipe is filled to the brim with Italian flavours; the family are going to enjoy tucking in.

Serves: 4

Preparation time: 25 minutes

Cooking time: 40 minutes

Oven temperature: 170oC

♥ 1 small French loaf, preferably a day old
♥ 30ml olive oil
♥ 2 x 410g cans chopped tomatoes with Italian herbs
♥ 2 cloves garlic, crushed
♥ 1 medium red onion, sliced
♥ 125g mushrooms, sliced
♥ handful of olives, pitted
♥ 1 small punnet cherry tomatoes, halved
♥ 100g chorizo sausage, thinly sliced (or use salami)
♥ 200g mozzarella, grated
♥ 4 large eggs
♥ 125ml milk
♥ 50g Parmesan, grated
♥ fresh basil, to serve
