Aubergine, Tomato and Harissa Baked Eggs with Tahini and Honey Flatbreads

Hearty food will always make us feel satisfied and warm inside, however, harissa pasta could also provide nutrients for a happier you. It contains vitamin B6 as well as manganese; a study found that those with low blood levels of manganese experienced more PMS-related mood swings. Chromium in garlic is also said to boost feel-good serotonin in the brain.

Serves 2Takes 50 mins

1 small aubergine,
diced into 1cm (½in) cubes
1 red pepper, cut in half
and deseeded
4tbsp olive oil, plus extra
for drizzling
1 small onion, finely diced
2 garlic cloves, crushed
½tsp ground cumin
½tsp smoked paprika
8 ripe vine cherry tomatoes
1x400g (14oz) tin chopped
tomatoes
Zest of 1 lemon
2 tbsp harissa
1tsp sugar
1 handful of baby spinach
1 handful of fresh coriander,
chopped
4 eggs

To serve…

2 tahini and honey flatbreads

Greek yogurt
