Richard Mann hails from Auchmithie on the outskirts of Arbroath, a village that came to prominence for its lightly smoked haddock which is better known as the legendary Smokie. According to folklore, a store in the village caught fire one night, destroying several barrels of fish. When the locals started to clear up the mess, they discovered that some of the containers had miraculously survived. Upon further inspection, the haddock had been cooked inside. Much to their amazement they found that the fish was not only edible, but also had a wonderfully distinctive taste – the humble Smokie was born, and is now one of Scotland’s most famous delicacies.
