Five ways with... MUSHROOMS

MUSHROOM RAGU

This great, hearty veggie main is packed to the brim with vitamin D.

SERVES 4

3tsp rapeseed oil
1 onion, chopped
200g (7oz) button mushrooms, sliced
300g (10oz) Quorn mince
400g tin chopped tomatoes
1tbsp balsamic vinegar
2tbsp sun-dried tomato paste
1tsp smoked paprika
125g (4oz) dried spaghetti
2 large courgettes, spiralised or cut into thin ribbons
Fresh basil, to garnish

1 Heat 2tsp of the oil in a large pan, add the onion and fry over a medium heat for 4-5 mins to brown lightly. Add the mushrooms and cook for 2 mins.
