MUSHROOM RAGU
This great, hearty veggie main is packed to the brim with vitamin D.
SERVES 4
✣ 3tsp rapeseed oil
✣ 1 onion, chopped
✣ 200g (7oz) button mushrooms, sliced
✣ 300g (10oz) Quorn mince
✣ 400g tin chopped tomatoes
✣ 1tbsp balsamic vinegar
✣ 2tbsp sun-dried tomato paste
✣ 1tsp smoked paprika
✣ 125g (4oz) dried spaghetti
✣ 2 large courgettes, spiralised or cut into thin ribbons
✣ Fresh basil, to garnish
1 Heat 2tsp of the oil in a large pan, add the onion and fry over a medium heat for 4-5 mins to brown lightly. Add the mushrooms and cook for 2 mins.
