“The first time I made a soufflé omelette was in my home economics class. I’ve never forgotten it. The eggs are so light and cloud-like, you’ll never want to prepare an omelette any other way. Change the cheeses to suit your preference. I’m a fan of stinky cheese. You might not be. And that’s okay.”
