CRUNCHY-TOPPED LAMB MEATBALL BAKE

450g packet twin-pack garlic bread
2 tblsps olive oil
1 red capsicum, chopped
200g tub red capsicum & cashew dip
400g can crushed tomatoes
½ cup finely grated parmesan
¾ cup grated mozzarella
MEATBALLS
750g lamb mince
½ cup finely grated parmesan
3 green spring onions, finely chopped
¼ cup finely chopped fresh parsley
1 egg, lightly beaten
1 Process half of one loaf (4 slices) of the garlic bread in a food processor to form fine crumbs. You will need 1 cup. Tear remaining bread into 5cm pieces. Set aside.
2 To make meatballs, place all ingredients in a large bowl.
Add garlic crumbs. Season with salt and pepper. Mix well. Divide into equal portions (about 1/4 cup each). Using damp hands,
