JAZZ APPLE & GINGER DHAL

Serves 4 Preparation time 10 minutes Cooking time 40-45 minutes

“It might sound a bit weird using apple in a dhal, but it works so well. This recipe is suitable for freezing, so you always have a nutritious meal on hand.”

INGREDIENTS

• 1 tbsp coconut oil• 1 tsp curry powder• 1 tsp cumin powder• ½ tsp cayenne pepper• 1 onion, peeled and finely chopped• A thumb-size piece of fresh ginger, peeled and grated• A small piece of fresh turmeric, grated• 3 cloves garlic, crushed• 1 Jazz apple, grated on the large holes of a box grater• 200g/7oz red split lentils, well rinsed• 1 x 400g can coconut milk• Salt and freshly ground black pepper, to taste
