HEARTY HERBY STEW

 Serves 2 Preparation time 15-20 minutes Cooking time 30-35 minutes

INGREDIENTS

• 1½ tbsp olive oil• 3 echalion shallots (about 100g/4oz), finely diced• 2 carrots, finely chopped• 1 celery stick, sliced thinly• Salt and freshly ground black pepper• 2 large garlic cloves, grated• 8 sprigs fresh thyme, leaves chopped• 2 sprigs fresh rosemary, leaves chopped• 50ml/2fl oz white wine• 250ml/9fl oz vegetable stock• 500ml/18fl oz water• 1 bay leaf• 2 tsp Dijon mustard• 250g/9oz new potatoes• 1 x 400g tin green lentils in water, drained and rinsed• 1 x 400g tin cannellini beans in water, drained and rinsed• 1 lemon, halved• 200g/7oz cavolo nero, leaves chopped and stalks discarded• 4 fresh sage leaves, sliced thinly• 1 tsp yeast extract (eg Marmite)• 15g/¼oz fresh parsley leaves, chopped• 2 tbsp nutritional yeast
