CARPACCIO OF COURGETTE & CRUSHED PEAS WITH MELTED GOAT'S CHEESE
Serves 4 Preparation time 25-30 minutes Cooking time 10 minutes
INGREDIENTS
• 2 courgettes
• 200g/7oz frozen peas
• Juice and zest of 1 lemon
• 3 tbsp olive oil
• Sea salt and freshly ground black pepper
• 200g/7oz goat’s cheese (chèvre)
• 4 tbsp clear honey
• 2 sprigs of fresh thyme, chopped
• A handful of rocket leaves
• A handful of fresh spinach leaves
• A handful of fresh basil leaves
• 4 tbsp pine nuts, toasted, to serve
