1 cup apple juice
2 tablespoons Zatarain’s Root Beer Concentrate
2 tablespoons apple jelly
1½ tablespoons steak sauce
1 dried bay leaf
6 whole cloves
1 cinnamon stick
Peel and juice of ½ orange
Peel of ½ lemon
1 (8- to 10-pound) cured smoked ham
¾ cup firmly packed dark brown sugar
½ teaspoon dry mustard
½ cup water
