1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
¾ teaspoon ground ginger
½ teaspoon salt
½ teaspoon ground cloves
½ cup cold unsalted butter, cubed
1 cup (¼-inch) diced Pink Lady apples
1 cup plus 1 tablespoon cold heavy whipping cream, divided
½ teaspoon vanilla extract
2 tablespoons pink sparkling sugar
