280g dried spaghetti Few chopped oregano leaves, to garnish
2 cups mixed garden salad, per person, to serve

400g can no-added-salt lentils, rinsed, drained
250g lean pork mince
½ tsp finely chopped rosemary
½ tsp Dijon mustard
1 clove garlic, crushed Freshly ground black pepper

Sauce

1 Tbsp olive oil
2 eschalots, finely chopped
2 cloves garlic, finely chopped
500g cherry tomatoes, halved
125ml (½ cup) water
2 tsp salt-reduced tomato sauce Pinch chilli flakes
2 Tbsp chopped oregano

1 Preheat oven to 180°C (fan-forced). Line a baking tray with baking paper.
