chickpea salad with halloumi
Serves 4 Takes 25 mins
45ml olive or avocado oil + extra
45ml mint sauce
45ml white wine vinegar
10ml Dijon mustard handful mint, chopped
400g tin chickpeas, drained
400g halloumi, sliced
1 red onion, thinly sliced
125ml soft dried apricots, thinly sliced
125ml pistachio nuts, chopped
1 Combine the oil, sauce, vinegar, mustard and mint.
