mussels with mustard mayo
Serves 4-6 Takes 15 mins
250ml white wine
2 small celery sticks, thinly sliced
1 carrot, peeled and diced
2 small onions, peeled and quartered
2 garlic cloves, crushed small handful parsley, chopped
2kg mussels, beards removed and scrubbed
FOR THE SAUCE
30ml Dijon mustard
30ml mayonnaise
15ml white wine vinegar
lemon wedges, to serve
1 Combine the wine, celery, carrot, onion, garlic and parsley in a big saucepan with a lid. Bring to a boil. Add the mussels and cook with the lid on for 7-10 minutes. Shake the saucepan once or twice to distribute the mussels evenly. The mussels are ready when they open. Discard any unopened mussels.
2 Combine all the sauce ingredients and serve with the mussels and lemon wedges.
tip
Replace the white wine with water, if you prefer.
