2kg boneless pork loin (with rind on) olive or avocado oil, for cooking30ml soft butter1 onion,30ml honey80ml chicken stock125ml fresh sourdough breadcrumbs250ml green apples, peeled and grated125ml toasted pecan nuts, chopped1 thyme sprig, finely chopped60ml sea salt flakes6-8 small whole apples wholegrain mustard, to serve
