SWEET POTATO HASH BROWNS WITH CHORIZO
SERVES 20 READY IN 20 MIN
850g sweet potatoes, cut into 1cm chunks
2 tbsp olive oil
120g chorizo, diced
175g cherry tomatoes, halved (see our tip)
6 spring onions, trimmed and chopped
2 tbsp fresh parsley, chopped
300ml sour cream
1 Put the cut-up sweet potatoes in a pan of salted water. Bring the pan to the boil and simmer for 4 min, until potatoes are parboiled.
