SPICY SPATCHCOCK CHICKEN
SERVES 4 READY IN 1 HR 20 MIN
1,4kg chicken
Juice of 1 lemon
1 tbsp harissa paste
2 tbsp olive oil
250g plain yoghurt
2 tbsp tahini paste
3 tbsp coriander, chopped
1 Preheat a covered braai, or preheat the oven to 200°C. Put the chicken on a board, breast down. Using kitchen scissors, cut along both sides of the backbone and remove it. Turn chicken over, pressing down on the breast to fatten. Push a few skewers through the wings
