PANETTONE TRIFLE WITH SPARKLING SHIRAZ, STRAWBERRIES AND BLACKBERRIES

PREP + COOK TIME 35 MINUTES (+ COOLING & REFRIGERATION) SERVES 10

750ml bottle sparkling shiraz
⅔ cup (150g) caster sugar
1½ tablespoons gelatine powder
500g small strawberries, halved
250g blackberries
300g panettone, cut into 3cm cubes
¼ cup (60ml) sweet sherry
600ml thickened cream
2 tablespoons icing sugar, sifted, plus extra, to serve
3 cups (750ml) vanilla bean custard
2 tablespoons orange zest icing sugar, extra, to serve

Combine 1 cup (250ml) sparkling shiraz and sugar in a small saucepan.
