MANGO & LIME GRANITA
PREP + COOK TIME 10 mins + freezing SERVES 4
• 1 cup sugar
• 1 cup water
• 1 makrut lime leaf
• 1½ cups mango flesh
• 1½-2 tablespoons lemon or lime juice, to taste
1 Place sugar, water and lime leaf in a small saucepan. Heat, stirring, until sugar is dissolved. Simmer for 2 minutes, then cool completely.
2 Process the mango flesh to a smooth purée.
