Apple & Pepita Bliss Balls

PREP TIME 20 MINUTES + CHILLING MAKES 35

 1 cup natural sliced almonds
 200g pitted medjool dates, chopped
 50g coarsely chopped dried apple
 1¼ cups shredded coconut
 ½ cup pumpkin seeds
 2 teaspoons hot water, approx

1 Process almonds until finely chopped. Add dates, apple, ¼ cup shredded coconut and the pumpkin seeds; process until well combined.

2 Add the water; process until mixture comes together.

3 With damp hands, roll 2 level teaspoons of mixture into balls. Roll in remaining 1 cup shredded coconut to coat; place on an oven tray lined with baking paper. Refrigerate for 1 hour.
