Eggplant & Lamb Biriyani with Cashews

PREP + COOK TIME 40 MINUTES SERVES 6

 1 tablespoon vegetable oil
 1 teaspoon yellow mustard seeds
 1 teaspoon cumin seeds
 1 onion, chopped
 1 eggplant, cut into 15mm cubes
 500g lamb mince
 ½ cup tikka curry paste
 1 tablespoon natural yoghurt, plus extra, to serve
 ½ teaspoon salt
 large pinch of dried chilli flakes
 1½ cups basmati rice
 2 cups beef stock
cup sultanas, roasted cashews and coriander, to serve (optional)
