IN SEASON VEGE TOMATOES

Caprese-Style Chicken & Tomato Bake

PREP + COOK TIME 35 MINUTES + STANDING SERVES 4-6

 1 tablespoon olive oil
 1 tablespoon red wine vinegar
 pinch of dried chilli flakes
 ½ teaspoon Italian herb seasoning
 3 x boneless, skinless chicken breasts, halved horizontally
 2 cups tomatoes, halved
 2 tablespoons balsamic vinegar
 1 tablespoon brown sugar
 4 cloves garlic, crushed
 ½ red onion, chopped
 ½ teaspoon thyme
 large handful of basil leaves, coarsely chopped, plus extra, to serve
 1½ cups mozzarella cheese, grated
 handful of olives

Combine oil, red wine vinegar, chilli flakes and herbs in a shallow dish. Season the chicken well
