Quinoa Porridge with Figs

PREP + COOK TIME 25 MINUTES SERVES 4

 1 cup quinoa, rinsed, drained
 3 cups water
 ½ cup soy milk
 2 tablespoons brown sugar
 1 teaspoon ground cinnamon
 2 large figs, cut into wedges (see tips)
 150g raspberries
 honey, to serve

1 Place quinoa and the water in a large saucepan; bring to the boil. Reduce heat to low; cook, covered, for 15 minutes or until quinoa is almost tender and water is absorbed.

2 Add soy milk, brown sugar and ground cinnamon; stir to combine. Cook for 5 minutes or until tender.

3 Serve the porridge topped with fresh figs and raspberries; drizzle with honey.
