    JERK CHICKEN AND BANANA SALSA TACOS

    SERVES 6 PREPARATION: 20 MIN COOKING: 50 MIN

    CHICKEN

    1 whole chicken, butterflied
    1 onion, sliced
    2 garlic cloves
    5cm fresh ginger, grated
    1 habanero pepper or 2 small chillies
    zest and juice of 1 orange
    zest and juice of 1 lemon
    30ml (2T) soy sauce
    10ml (2t) Worcester sauce
    15ml (1T) brown sugar
    a few sprigs of thyme
    15ml (1T) allspice
    5ml (1t) ground cinnamon
    2,5ml (½t) ground nutmeg
    salt and pepper

    SALSA

    2 bananas, diced½ cucumber, dicedhandful of fresh coriander, chopped1 red
