SPANISH CHICKEN BAKE
A simple and easy recipe in one dish n just add lots of crusty bread!
Serves 4 • Ready in 1 hour 30 •inutes
250g cherry to•atoes
2 shallots, sliced into wedges
2 red peppers, roughly chopped
8 chicken thighs
1 bunch each of thyme and oregano
2tbsp sweet smoked paprika
4tbsp oil
1 glass of white wine
6 garlic cloves, unpeeled
100g green olives, pitted
crusty bread, to serve
1 Heat the oven to 180°C, 160°C fan. Toss the tomatoes, shallots, peppers, chicken, thyme and oregano with the paprika and olive oil in a large roasting tin.
2 Pour over the wine and bake for 45 minutes. Add garlic and bake for another 30 minutes until the chicken is cooked through. Top with olives and serve with crusty bread.
