1½ cups couscous1 large chicken-style stock cube, crumbled3 green spring onions, finely chopped1 cup chopped fresh parsley leaves200g punnet medley tomatoes, quartered½ cup roasted almonds, chopped60g packet baby rocket, chopped¼ cup lemon juice2 tblsps olive oil Hummus and sliced avocado, to serve
