Beetroot, orange and goat’s cheese salad with walnut dressing v

SERVES 6 as a side, 4 as a main

5 beetroots, a mix of colours, peeled and thinly sliced
2 baby gem lettuce, leaves separated
2 oranges, skin removed, flesh sliced and halved
Olive oil, for drizzling
Small bunch of chives, chopped
1 small goat’s cheese
40g walnuts, toasted and roughly chopped

FOR THE WALNUT DRESSING

50g sourdough bread
40g walnuts
2 lemons, juiced
1 garlic clove
110ml water
½ tsp salt
