PORK ROAST (BABY’S FIRST CHRISTMAS)

Serves 6

1.7kg pork loin, rolled and skin scored
Extra virgin olive oil, for rubbing
Sea salt and freshly ground black pepper
8 Granny Smith apples, cut in halves
250g green beans, trimmed

Preheat oven to 220°C. Rub skin of pork with oil and sprinkle with salt and pepper. Put pork in a large roasting pan or baking dish. Roast for 20-30 minutes, until skin starts to bubble. Reduce oven temperature to 180°C and continue to roast the
