HAY & STRAW PASTA WITH CHICKEN

Hay and straw is a classic dish made with a combination of regular and spinach pastas. Although their flavor differences are subtle, the color contrast makes a beautiful presentation.

Makes 6 servings (7 cups) Total time: 45 minutes

COOK:

4 oz. each regular and spinach spaghetti

HEAT:

1/4 cup olive oil
2 oz. prosciutto, diced
1 lb. boneless, skinless chicken breasts, cubed and seasoned with salt, black pepper, red pepper flakes, and Italian seasoning

ADD:

1 Tbsp. minced fresh garlic3 cups diced Roma tomatoes1 cup fresh mozzarella pearls1/2 cup chopped fresh basil
